Maple Beef Stew
I was a winter bride, so it should come as no surprise that I wasn’t married for very long before my husband got a hankering for a hearty stew. Since neither of us had any good stew recipes up our sleeves at that time, we began to search for the perfect cookbook to aid in our culinary adventures. Our search ended when we came across Jenna Holst's Stews: 200 Earthy, Delicious Recipes. Her book contains a wonderful collection of healthy stews from all around the world!

Over the years, we have had the pleasure of savoring several of Jenna's stews! Today I am sharing our version of Jenna’s Quebec Maple Beef Stew, which fast became a family favorite!

This stew is as perfect for the cool crisp days of Autumn as it is for the bone-chilling days of Winter! There is something comforting in the knowledge that a nice hearty bowl of stew awaits you at the end of a long day. I hope you love this recipe as much as I do. Bon Appétit!

Ingredients:

2 ½ Pounds Beef Cut Into 1 ½ Inch Cubes
3 Medium Leeks, White Part Only, Thinly Sliced
2-3 Sweet Potatoes, Peeled And Cut Into 1 Inch Cubes
3 Large Rutabagas, Peeled And Cut Into 3 Inch Cubes
1 Cup Pure Maple Syrup
*4 Cups Beef Broth
2 Tablespoons Dried Thyme Leaves
¾ Teaspoon Salt
1 Tablespoon Freshly Ground Black Pepper

* We use Better Than Bouillon Beef Based (Reduced Sodium).

Instructions:

1. Combine all of the ingredients in a large stock pot and bring to a low boil, stirring regularly. Reduce to a simmer.

2. Simmer uncovered for 6 to 8 hours, stirring every half hour. If necessary, you can simmer off and on over the course of 2 days.

3. Simmer until the vegetables are cooked, the meat is falling apart, the liquid is reduced, and the mixture has thickened.

If the meat has fallen apart but the mixture is not thick enough, add 4 to 6 tablespoons of flour and let the mixture simmer for another 45 minutes until it has finished thickening.

Serving Suggestions:

Serve with rice, biscuits, or with a dense, hearty bread. Serves 12.

Thick. Hearty. Healthy. Yum!
