Vanilla Pear Bread

There are few things in life as wholesome or satisfying as a loaf of home baked bread. I especially love breads that can double as desserts due to their natural sweetness. So, I’m delighted to share with you our latest creation – Vanilla Pear Bread – which was adapted from a Williams Sonoma muffin recipe!

This recipe makes two loaves, which allows you to enjoy one now and serve one later (a wonderful time saver) or to share a sweet delight with a friend!

TOPPING INGREDIENTS

6 Tablespoons Sugar
4 Tablespoons Chopped Walnuts, Ground
1/2 Teaspoon Ground Cinnamon

BREAD INGREDIENTS

2 Cups All-Purpose Plain Flour
1/2 Cup Sugar
2 Teaspoons Ground Cinnamon
1 Teaspoon Freshly Grated Nutmeg
2 Teaspoons Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
2 Large Eggs
1/2 Cup Butter at Room Temperature
3/4 Cup Buttermilk
2 Tablespoons Pure Vanilla Extract
1 Cup Walnuts, Coarsely Chopped
4-5 Firm, Ripe Pears, 2 Pounds Total, Peeled, Cored, and Coarsely Chopped

INSTRUCTIONS

Preparation:

1. Preheat the oven to 350 degrees. Grease two loaf pans with butter.

2. In a small bowl, stir the sugar, walnuts, and cinnamon together.

Muffin Instructions:

3. In a bowl, stir together the flour, sugar, cinnamon, nutmeg, baking powder, baking soda, and salt.

4. In an electric mixer with a paddle attachment, mix together on medium speed the eggs, oil, buttermilk, and vanilla until blended. Add the flour mixture, stirring until it is just evenly moistened. With the mixer on low, fold in the pears and walnuts until they are just evenly distributed – no more than a few strokes. Do not over mix – be careful not to break the fruit.

5. Evenly divide the batter between the two loaf pans. Sprinkle each loaf with some of the topping, dividing the topping evenly between the two loaves.

6. Bake the bread for about 60 minutes, rotating each pan around 35 minutes. The bread is done when you can insert a knife in the center of each loaf and it comes out clean.

7. Important: Transfer the pans to a wire rack and LET THE LOAVES COOL COMPLETELY before you gently remove them from the pans. If you remove them before they are COMPLETELY cool, they will fall apart.

8. Slice and serve warm.

  22. I have to double thank you for this recipe. First, thanks for linking it to My Meatless Mondays. More important, yesterday, I found a recipe for a cake with pears that I was thinking of making. Now, I have to make a decision. The bread is more practical than the cake. Groan, decisions, decisions. I am printing it up now and then I will decide.
