Cranberry Tuna Salad
When the temperatures soar, and you’re looking for something quick and refreshing to serve your family, try my family's specialty Cranberry Tuna Salad!
The first time I ever tasted Cranberry Tuna was at Whole Foods. Now, I’m not a huge tuna fan in general, but I love this dish, so my husband and I worked on recreating it. None of the recipes we tried turned out right - most were too tart - so we kept experimenting until we created our own addictive version of this recipe! The dish flies out of our kitchen so fast, we created two variations of it - a regular sized version - and a crowd pleaser version - so you can pick the size that best fits your family's needs!
Ingredients – Regular Version:
2 Cans of Tuna
2-4 Tablespoons of Fat Free Mayonnaise
2 Tablespoons of Green Onions, Chopped
3 Tablespoons of Dried Cranberries – Coarsely Chopped
2 Teaspoons of Granulated Sugar
Ingredients – Crowd Pleaser Version:
1 Large Can of Tuna – 4 Pounds, 2 ½ Ounces (available at Costco)
1 Small Jar of Fat Free Mayonnaise
2 Bunches of Green Onions, Chopped
3 Packages of Dried Cranberries – About 10 Ounces, Coarsely Chopped
3 Tablespoons of Granulated Sugar
Instructions:
1. Mix ingredients together in a large bowl.
2. Refrigerate until serving time.
Serving Suggestions:
1.Serve a sandwich on toasted bread, a croissant, a baguette, or your favorite roll!
2. Cut a melon in half; fill with Cranberry Tuna Salad and serve!
3. Serve the Cranberry Tuna Salad stuffed in a lettuce wedge!
